Ingredients
2 cups cooked chicken cut into ½ inch cubes
2 cups red seedless grapes
1 cup walnuts toasted and roughly chopped
4 stalks celery minced
Small onion minced
Fresh arugula
Fried Garlic dressing
2 tbsp Fried Garlic Sauce
½ cup mayonnaise
¼ cup lemon juice
½ tsp lemon zest
1 tsp ground black pepper
Salt to taste
Method
Step 1 - In a small bowl combine all garlic dressing ingredients until dressing is smooth. Set aside.
Step 2- In a large bowl combines the chicken, grapes, walnuts, celery and red onion.
Step 3 - Pour Fried garlic dressing over the salad ingredients and gently mix to combine.
Step 4 - Eat immediately over a bed of fresh arugula.
