Yes, you read that right and all the 3 mean the same. Szechuan in Chinese means four rivers, and in modern pinyin romanisation, it is spelt as Sichuan. Schezwan, too is the romanisation of the word Szechuan. Szechuan sauce is a hot and spicy flavoursome sauce made with Sichuan peppers, red chillies, garlic, ginger and soy sauce. The Sichuan sauce got its name from its origin—Sichuan province in Southwest China. Sichuan sauce has become a sensation in kitchens worldwide with its explosive blend of spicy, sweet, and savoury flavours. Szechuan sauce is a versatile sauce that is simple and easy to make and can be added to spice up any Asian food.

Sichuan/Szechuan Sauce Ingredients

The ingredients to make Sichuan Sauce are:

1. Spicy Ingredients: 20-25 dried red chillies and 1 tbsp chilli garlic sauce

2. Aromatic Ingredients: 1-2 tbsp minced ginger garlic and Sichuan peppers (you can use Indian peppers if you can’t get them, but the flavour will not be authentic)

3. Savoury Ingredients: ¼ cup soy sauce, 1-2 tbsp rice vinegar, 1 tbsp brown sugar

4. Thickening Ingredients: 1 tbsp cornstarch mixed with 2 tbsp water

How to Make Sichuan/Szechuan Sauce?

Once you have all the ingredients ready, follow these instructions to make Szechuan sauce: 

1. Add the red chillies to a bowl and soak it in hot water for 30 mins. If you want to keep the heat in control, deseed the chillies.

2. Once soaked, make a fine paste by adding 1-2 tbsp of water.

3. Heat oil in a pan, add the ginger garlic and Sichuan peppers and saute until fragrant.

4. Add the red chilli paste and 2-3 tbsp water and saute it for 3-4 mins.

5. Cover and cook it on simmer until the oil separates on the sides.

6. Now, add soy sauce, rice vinegar and brown sugar and stir it while on simmer.

7. To thicken the sauce add the cornstarch slurry and whisk it constantly.

8. Cook for another 2 minutes and turn off the stove.
