Sichuan Chicken


250g Leg boneless skinless chicken breasts

½ Egg

2 tbsp cornflour

2 tbs Sichuan chilli paste

3 garlic cloves chopped

1 small stalk celery chopped

Salt to taste

½ tsp crushed black pepper

1 tbs vegetable oil

1 tsp vinegar

1 tbs light soy sauce

½ tsp Sichuan peppercorns (optional)

½ cup bell mixed cut into triangular pieces

½ Onion cut into triangular

3-4 dried red chillies sliced diagonally

1 stalk spring onion for garnish


Step 1 – Take 250g of leg boneless chicken diced into bite sized cubes

Step 2 – Marinate it with salt and pepper with ½ egg and 1 tablespoon of cornflour

Step 3 – Stir-fry or boiled if you’re in the mood a highly flavourful fry and keep aside

Step 4 – Add dried red chillies to the same non-stick pan and onion, celery, add garlic and sauté till golden.

Step 5 – Add Sichuan chilli paste and some water and mix. Add light soy sauce, salt, crushed peppercorns and mix well

Step 5 – Add chicken and bell peppers and mix well

Step 5 – Add vinegar and spring onion, Serve hot
